Ingredients
For the banana bites:

2–3 bananas

Smooth or crunchy peanut butter
For the cacao coating:

Ceremonial cacao (or dark chocolate)

1–2 tsp natural sweetener of your choice:

honey

maple syrup
-
agave
-
or a splash of vanilla extract

Desiccated coconut, for topping
Instructions

Prepare the bananas
Peel your bananas and slice each one lengthwise.
Then cut each long strip in half so you have chunky, even pieces. -
Add the peanut butter
Spread a little peanut butter onto one banana chunk,
then top it with another chunk to form a small sandwich. -
Freeze the banana sandwiches
Place them on a tray lined with baking paper and freeze for
20–30 minutes until firm. -
Melt the cacao using a double boiler
Set a heatproof bowl over a small pot of gently simmering water
(making sure the bowl doesn’t touch the water).
Add your cacao and stir slowly as it melts.
If you want it sweeter, stir in a natural sweetener such as:
– honey
– agave
– maple syrup
– or a splash of vanilla extract
Mix well until smooth and glossy. -
Dip the banana bites
Using a toothpick or fork, dip each chilled banana sandwich into the melted cacao,
letting any excess drip off. Place them back onto the lined tray. -
Top with coconut
Sprinkle desiccated coconut over the tops immediately so it sticks. -
Freeze to set
Return the tray to the freezer for 15–20 minutes,
or until the chocolate coating has hardened. -
Serve or store
Enjoy straight from the freezer, or keep them stored in an airtight container
for up to 2 weeks.
Let them soften for 2–3 minutes before eating for the perfect bite.
