Unlike most ceremonial cacao, which is fermented, Lavado cacao is washed and sun-dried straight after harvest, preserving its natural bitterness and unlocking even greater health benefits. This traditional process, passed down for generations, keeps the cacao closer to its original, sacred state, and you can really feel the difference.

The Origins of Cacao Culture

Over 3,500 years ago, in what is now southern Mexico, the Mokaya people became the earliest known culture to drink cacao. Archaeological finds from this region show they were preparing cacao as a bitter, unsweetened drink as early as 1900 BCE.

This cacao wasn’t eaten as chocolate. It was drunk during gatherings and rituals, valued for its energising and heart-opening effects. The Aztecs later called this drink xocolatl, meaning “bitter water”, a name that captures its true, powerful character.
